A 10 mins salad for a light dinner.
Though this salad is extremely easy to make, it is a favorite in my house as a light dinner.
Ingredients
For the Salad
- 300 gr lettuce [10.5 oz] ( I buy it washed and sliced)
- 3 pears / apples / cucumbers
- 50 gr cheese (see suggestions in notes) [2 oz]
- 30 gr sliced almonds
For the Vinaigrette Sauce
- 1 part honey or mustard (or a combination)
- 3 parts balsamic vinegar (preferably aged)
- 9 parts olive oil (extra virgin)
Instructions
The Salad
- Roast the almonds – place a non stick pan on a low heat an put the almonds in until they turn light brown.
- Peel the pears/apples and cut to thin slices.
- Cut the cheese to small pieces.
- Combine all in a bowl and add the sauce.
The Sauce
- Combine all ingredients and mix until homogenous (easiest to mix in a bottle or closed jar). You can make more and keep in the refrigerator for a month or two.
Notes
Cheese Suggestions – my favorite for this kind of salad are blue cheeses – Roquefort, Gorgonzola or Stilton. If you don’t like blue cheeses you can use Buche de Chèvre, Camembert or Brie.
I did not have a pear so I put persimmon. Lettuce weighing 250 grams so I put less olive oil. Whole wheat crackers on the side, a cup of tea with mint. Perfect dinner for two
