Ingredients
  

For the Salad

  • 300 gr lettuce [10.5 oz] ( I buy it washed and sliced)
  • 3 pears / apples / cucumbers
  • 50 gr cheese (see suggestions in notes) [2 oz]
  • 30 gr sliced almonds

For the Vinaigrette Sauce

  • 1 part honey or mustard (or a combination)
  • 3 parts balsamic vinegar (preferably aged)
  • 9 parts olive oil (extra virgin)

Instructions
 

The Salad

  • Roast the almonds - place a non stick pan on a low heat an put the almonds in until they turn light brown.
  • Peel the pears/apples and cut to thin slices.
  • Cut the cheese to small pieces.
  • Combine all in a bowl and add the sauce.

The Sauce

  • Combine all ingredients and mix until homogenous (easiest to mix in a bottle or closed jar). You can make more and keep in the refrigerator for a month or two.

Notes

Cheese Suggestions - my favorite for this kind of salad are blue cheeses - Roquefort, Gorgonzola or Stilton. If you don't like blue cheeses you can use Buche de Chèvre, Camembert or Brie.
