300grlettuce [10.5 oz] ( I buy it washed and sliced)
3pears / apples / cucumbers
50 gr cheese (see suggestions in notes)[2 oz]
30grsliced almonds
For the Vinaigrette Sauce
1parthoney or mustard(or a combination)
3partsbalsamic vinegar (preferably aged)
9 parts olive oil(extra virgin)
Instructions
The Salad
Roast the almonds - place a non stick pan on a low heat an put the almonds in until they turn light brown.
Peel the pears/apples and cut to thin slices.
Cut the cheese to small pieces.
Combine all in a bowl and add the sauce.
The Sauce
Combine all ingredients and mix until homogenous (easiest to mix in a bottle or closed jar). You can make more and keep in the refrigerator for a month or two.
Notes
Cheese Suggestions - my favorite for this kind of salad are blue cheeses - Roquefort, Gorgonzola or Stilton. If you don't like blue cheeses you can use Buche de Chèvre, Camembert or Brie.
