A light romantic dinner to surprise your partner with.
Need to make a romantic dinner for your significant other? This post is a little different than the others, this is not a single recipe but rather a suggestion for a light meal. The dishes here are light and can go well with other activities – like a movie. You can make all dishes in advance so as not to disrupt the night by cooking and checking on the food.
Here are recipes for two appetizer dishes, which can go along great with a plate of cheeses (see suggestions at the end of this post). If you want you can make liver pate as an appetizer as well, it can go along great with the theme of a light dinner.
If you still prefer a full course meal – why not check one of the pasta dishes – I highly recommend Rosé sauce.
Tomato Bruschetta
At first look, the Tomato Bruschetta looks simple, but if you make it right – it is surprisingly delicious. Leaving the tomatoes on the bread for a long while will cause the bread to become soggy, you should prepare everything beforehand but place the tomatoes on the bread just before serving.

- Toaster
Ingredients
- 2 fresh firm tomatoes
- 2 slices of white bread for toasts
- 10 leaves of basil
- 1 clove garlic
- extra virgin olive oil
- grey sea salt
Instructions
- Toast the two slices of bread.
- When the slices are browned a bit, take the slices out and while still hot brush them with olive oil.
- Halve the garlic clove and rub each half on a slice of bread. Let the bread cool, then cut it in half diagonally.
- Cut the tomatoes into small pieces and arrange them on the bread.
- Cut the basil into thin slices and spread over the tomatoes.
- Sprinkle the salt and spread oil on the bread.
Cheese Mushroom
Prepare the mushroom in advance and pop it in the oven with cheese while eating the bruschetta.
Ingredients
- 4 large portabello mushrooms
- 4 thin slices of Buche de Chévre
- roasted almond slices
Instructions
- Wash the mushrooms and gently take the stems out.
- Place them in an oven sheet with baking paper tops facing up and bake in an oven preheated to 180°C (360°F) for 20 minutes until they lose significant amounts of liquid.
- Take the mushrooms out and pat them dry with a paper towel. Arrange them on a dry oven sheet with baking paper with gills facing up.
- Place the cheese on the mushroom and roasted almonds if using (the almonds add crunchiness). Place in an oven preheated to 180°c( 360°F) for around 10 minutes, until the cheese melts.

Cheese Plate
Of course, you should choose cheeses you know you love, but if you haven’t tried many, here is a suggestion on how to create a diverse plate.
- Parmesan /Pecorino
- Gruyere / Comte / Manchego
- Gouda / Cheddar
- Buche de Chévre
- Camembert / Brie
- Stilton/ Roquefort/ Gorgonzola – may be too spicy for some.
